We arrived at the campsite with good intentions of visiting Setabul. Unfortunately the weather took a turn for the worse and it bucketed down with rain for 2 days solid.
So we decided there was no point going out and getting wet when we could enjoy having a cook-a-thon in the comfort of our motorhome.
We have been meaning to make Piri Piri sauce since we arrived in Portugal so this gave us the perfect opportunity.
We got all the ingredients out.
Chopped them up and added them to the blender.
Once blended we tasted it and added a little more lemon juice. It was fiery hot and perfect for us.
We marinated Colin’s chicken in the Piri Piri sauce and left it for about 3 hours before cooking. I added the Piri Piri to cauliflower and then roasted it.
